Soil and Origin
Soil:Complex, volcanic soils, vines 10-27 years old.

Tasting Notes
Bouquet:Graphite and blackberries with dried flowers such as lavender and sage.
Taste:A medium to full bodied wine with fine tannins and a fresh and savory finish. Plenty of dark berries and forest floor at the end.
Food Pairing:A versatile wine that can be paired with roasted meats, smoked pork ribs, lamb with mint sauce and rustic potatoes, vegetarian dishes and sauces based on mushrooms, peppers, garlic, cumin.
Winemaking
Native yeast fermentation, followed by a post-fermentation maceration. Malolactic fermentation takes place naturally followed by 14 months of aging in 225L French oak barrels (70%, mix of new, 1st & 2nd use) 2,000 and 5,000 liter foudres (20%), and concrete eggs (10%). Naturally fined and minimally filtered.
