Soil and Origin
Soil:Red granite soils of primarily volcanic origin. Texture varies between clay-loam and sandy-loam.

Tasting Notes
Bouquet:Aromas of ash and ripe fruit, underscored by notes of plums and cherry with a subtle leafy touch.
Taste:Dry, rich and juicy, its precise balance accentuates the finegrained tannins, resulting in a pleasantly textured mouthfeel.
Food Pairing:It pairs well with red meats, lamb, dishes based on corn or potatoes, and ripe cheeses.
Winemaking
Native yeast fermentation in stainless steel and ovoid concrete tanks (eggs) with temperatures that varied between 24º-26ºC with a program of pumpovers and punchdowns, followed by malolactic fermentation. Th e new wine ages for 15 months. During the fi rst 6 months, 35% of the wine was aged in concrete eggs and the 65% remainder in barrels of diff erent sizes and uses. For the remainder, 50% was kept in concrete eggs, 16% in foudres, and 34% in new barrels.
