Soil and Origin
Soil:Calcareous, limestone-rich soils. With a high limestone and calcium carbonate content, these soils help retain acidity, slow ripening and impart an enhanced mineral expression.
Origin:D.O. Limari Valley. Campo Lindo, Ovalle, on the banks of the Limari River, Chile
Tasting Notes
Bouquet:The wine shows a pale-yellow color with greenish hues. Its fi rst impression on the nose is citrus and spice, enriched by touches of mandarin and creamy brioche notes.
Taste:Clear and precise with a touch of salinity. This is a wine of crisp acidity, with the tension that arises from the calcarean soils of Limarí.
Food Pairing:This wine makes a perfect pairing with goat cheese or ripe cheeses; oysters or smoked fish; snails or sushi. Vegetarians can pair it with pumpkin or cauliflower creams.
Winemaking
Selected bunches are sent to a pneumatic press for free-run must. Native yeast fermentation followed by the wine staying on its lees during its cellaring time of 11 months with frequent batonages. Aging: 63% in French 225-liter barrels (60% news, 20% 1 year and 20% 2nd year), 23% in egg-shaped cement vats and 14% in French 2,000-liter wood foudres.
