Soil and Origin
Soil:Loam to clay-loam texture with abundant stones, excellent drainage.
Origin:D.O. Maipo Valley. Fundo Los Morros, on the southern banks of the Maipo river, Chile
Tasting Notes
Bouquet:Ruby-red color offering blueberries and cherries on the nose, and additional notes of black chocolate and cedar.
Taste:Very juicy on the palate, it presents great volume and a long finish.
Food Pairing:This is a very appealing wine when paired withs meat based dishes and stews. It also makes a great companion to roasted pork ribs, grilled beef, or slow-cooked lamb.
Winemaking
Native yeast fermentation in stainless steel at temperatures between 24-26 ºC with a program of pumpovers or punchdowns followed by a post-fermentation maceration. After malolactic fermentation, the wine ages for 13 months in foudres (20%), French oak barrels (65%), and concrete egg tanks (15%). Finally, the wine is naturally stabilized and minimally filtered prior to bottling.
