Tasting Notes
Bouquet:Aromas of blueberries, cherries, and plums, with notes of blue flowers and graphite.
Taste:Fresh and balanced on the palate, with chalky tannins and a long finish.
Food Pairing:All kinds of meats, either smoked or grilled. It pairs well with roasted vegetables and dishes based on mushrooms, stews, and legume pots. It also makes a perfect companion for blue and ripe cheeses.
Winemaking
Native yeast fermentation, followed by a post-fermentation maceration. Malolactic fermentation takes place naturally in oak barrels and in concrete eggs, where the wine ages for 16 months. During the first 10 months, 49% barrels, 36% in 2,000-liter foudres and the remaining 15% in egg-shaped tanks. Then the blend is cellared for 6 months, 80% in cement eggs, 20% in barrels. Naturally fined and minimally filtered.
